Creamy Tomato Basil Soup

Ingredients:
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 cans (28 oz each) whole tomatoes, undrained
1 cup vegetable broth
1 teaspoon sugar
Salt and pepper to taste
1/2 cup heavy cream
Fresh basil leaves for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add diced onions and sauté until translucent.
Add minced garlic to the onions and sauté for an additional minute until fragrant.
Pour in the whole tomatoes with their juices. Break the tomatoes apart using a spoon or spatula.
Add vegetable broth, sugar, salt, and pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.
Use an immersion blender to blend the soup until smooth. If you don't have an immersion blender, carefully transfer the mixture to a blender and blend in batches.
Stir in the heavy cream, and let it simmer for an additional 5 minutes.
Adjust seasoning to taste. Serve hot, garnished with fresh basil leaves.
