Caprese Pasta Salad

Ingredients:
Pasta (farfalle or rotini): 8 oz
Cherry tomatoes: 1 pint, halved
Fresh mozzarella balls: 1 cup
Fresh basil leaves: 1 cup, torn
Extra virgin olive oil: 1/4 cup
Balsamic vinegar: 2 tablespoons
Garlic, minced: 2 cloves
Salt and pepper: To taste
Instructions:
Cook the pasta according to package instructions. Drain and let it cool.
In a large bowl, combine the cooked pasta, halved cherry tomatoes, fresh mozzarella balls, and torn fresh basil leaves.
In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the dressing.
Pour the dressing over the pasta mixture and toss until well coated.
Refrigerate for at least 1 hour to let the flavors meld.
Before serving, give the salad a gentle toss and garnish with additional fresh basil leaves.
