Caprese Pasta Salad

Ingredients:

  • Pasta (farfalle or rotini): 8 oz

  • Cherry tomatoes: 1 pint, halved

  • Fresh mozzarella balls: 1 cup

  • Fresh basil leaves: 1 cup, torn

  • Extra virgin olive oil: 1/4 cup

  • Balsamic vinegar: 2 tablespoons

  • Garlic, minced: 2 cloves

  • Salt and pepper: To taste

Instructions:

  1. Cook the pasta according to package instructions. Drain and let it cool.

  2. In a large bowl, combine the cooked pasta, halved cherry tomatoes, fresh mozzarella balls, and torn fresh basil leaves.

  3. In a small bowl, whisk together extra virgin olive oil, balsamic vinegar, minced garlic, salt, and pepper to create the dressing.

  4. Pour the dressing over the pasta mixture and toss until well coated.

  5. Refrigerate for at least 1 hour to let the flavors meld.

  6. Before serving, give the salad a gentle toss and garnish with additional fresh basil leaves.
